Health implications of nitrates in organic versus conventional vegetables

 

Abstract

Increased nitrate in the human diet is a recent change which has happened since artificial fertilisers, especially nitrogenous fertilisers, were used to boost crop yields. There is ample epidemiological evidence to show that fruit and vegetable intake is important for health. Populations on high fruit and vegetable intakes show lower incidence of cancer and cardiovascular disease.


Hardly any research has been done to determine if high nitrate levels in vegetables can increase disease risk.


This project aims to carry out a literature review to determine if evidence exists to link high nitrate levels in vegetables to increased disease risk.
